Biweekly works good for me

once a week, this way I don't have to use mag, strontium or iodine supplements

i still use all my supplements because i have a well stocked reef and i want to make sure corals have what they need. I still do testing once a week
just to maintain my the levels in the tank so everyones happy

once every couple week is good. Even after over 2 month without doing water changes, my test still show 0 no3 and Po4 but corals look much more healtier if I do it regularly.

I know that fish can get pretty stressed out by a water change, but what about corals. Do they struggle with too frequent changes?

I've never noticed my fish or coral stressed after a WC.
I think if you raise all your levels, calcium, PH , Alk, magnesium, to their proper levels before the water change, as well as heat your water to the same temp as your aquarium there should be no adverse effects to your tank.
Typically after a WC all my corals get great polyp extension.
